South Beach Chicken Paella

Ingredients

  • 1 1/2 lb chicken breasts, cut into 1/4 " pieces
  • 1 T olive oil
  • 1 med onion, chopped
  • 1/2 c whole grain brown rice
  • 3/4 c roasted red peppers, sliced
  • 2 c chicken broth
  • 1/4 t powdered saffron
  • 3 T parsley, chopped
  • salt
  • pepper

Directions

  1. Season chicken and cook in oil in skillet.

  2. Add onion and saute until soft.

  3. Stir in rice, peppers, broth, saffron, and bring to a boil.

  4. Cover, reduce heat and simmer til moisture is absorbed.

  5. Stir in parsley and season with salt and pepper.
