Chinese Chicken Noodle Soup

Ingredients

  • 3 pound broiler chick, cut up
  • 1 teaspoon salt
  • 2 cans mushroom stems and pieces, undrained
  • 6 green onion, finely chopped
  • 2 large carrots, cut diagonally
  • 1/4 cup soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon sherry
  • 1 teaspoon crushed ginger root
  • 3 1/2oz uncooked vermicelli

Directions

  1. Heat chicken, salt, and enough water to cover the chicken in a dutch over or pot. Cover and simmer for about 45 minutes.

  2. Cool chicken and broth quickly. Remove chicken from broth. Refrigerate broth. Remove skin and bones from the chicken. Cut chicken into bite size pieces. Skim fat from broth.

  3. Place chicken pieces, broth and remaining ingredients, except vermicelli in pot or dutch over. Heat to boiling, then reduce heat. Simmer uncovered for 20 minutes. Remove ginger root. Stir in vermicelli. Simmer uncovered until vermicelli is tender.
