Chicken Yakitori

Serves 4 people

Ingredients

  • 1.5 lbs boneless skinless chicken breasts cut into 1" pieces
  • 10 scallions, cut into 1" pieces
  • 1 large red bell pepper, cut into 1" pieces
  • 1/3 c low sodium soy sauce
  • 3 T mirin or rice wine
  • 2 t dark sesame oil
  • 2 T grated fresh ginger
  • 2 minced garlic cloves
  • 8 wooden skewers

Directions

  1. Heat over to broil.

  2. Put chicken, pepper, onion onto skewers.

  3. Whisk together soy sauce, rice wine, sesame oil, ginger, and garlic.

  4. Marinate skewers in 1/2 cup of marinade for 10 min.

  5. Set aside the rest of the marinade.

  6. Broil skewers 10 min and serve with reserved sauce.
