Cantonese Glazed Duck

Ingredients

  • 1 large or 2 small ducks
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons corn starch
  • 1/2 cup water
  • 1/2 cup soy sauce

Directions

  1. Cut ducks into quarters. Season with salt and pepper. Put on rack skin side up and sprinkle with paprika. Bake at 250 degrees for one and half hours or until golden brown. Remove from pan and with a sharp knife cut into bite size pieces. Remove all fat from pan. leaving the gravy. Mix 2 tablespoons corn starch with 1/2 cup of hot water. Pour 1 1/2 to 2 cups of water into the pan and stir in the corn starch mixture. Put about 1/2 cup soy sauce in pan and return duck pieces to sauce and cook until duck is glazed and tender. About 20 to 25 minutes.
