Herbed Rack of Lamb

Ingredients

  • 2 tablespoons fresh bread crumbs
  • 2 cloves garlic, peeled
  • 1/4 teaspoon coarse salt
  • 2 teaspoons fresh rosemary or thyme
  • 1 teaspoon coarse ground black pepper
  • 3 tablespoons extra virgin olive oil
  • 1 rack of rib lamb (8 chops) w/ bones frenched

Directions

  1. Preheat over to 400 degrees

  2. Place breadcrumbs in a bowl

  3. Mince garlic; sprinkle with salt. Add to the bread crumbs along with the rosemary and pepper. Mix in 2 tablespoons olive oil.

  4. Cut the rack of lamb in half, so there are 4 chops to each side. Brush the lamb on the fat side with the remaining olive oil. Coat rack and end chops, except for the underside, with the crumb mixture, patting it on well.

  5. Arrange the rack on a baking dish to fit; bake 20 to 25 minutes for medium-rare meat. before serving, decorate ends of bones with frilled paper booties, if desired. Slice the chops and serve immediately.
