Carrot Cake

Ingredients

  • 8 eggs
  • 340 ml extra-virgin olive oil
  • 300 g carrot, grated
  • 2 apples, grated
  • 2 apples, chopped
  • 3/4 cup sultanas
  • 160 g buckwheat flour
  • 4 tsp ground cinnamon
  • 3 tsp ground nutmeg
  • 2 tsp baking powder

Directions

  1. Preheat oven to 130°C, and butter

  2. a bread pan (use a good layer of

  3. butter to avoid sticking).

  4. Mix eggs and oil thoroughly.

  5. Add carrot, apple (grated and chopped), and sultanas, and mix well.

  6. Mix flour, spices, and baking powder, add to the carrot mixture, and mix.

  7. Pour into the bread pan. I normally have some mixture left over, so I make a few

  8. muffins as well.

  9. Bake approx 50 minutes, or when golden brown on top and skewer comes out

  10. clean (if you made some muffins, bake approximately 35 minutes
