Buckwheat Pancakes

Ingredients

  • 1/2 cup buckwheat flour
  • 1/2 cup masa flour
  • 2 tsp baking powder
  • 0.16 g stevia (4 scoops)
  • 1/4 cup cold, salted butter
  • 2 eggs
  • 2 tbsp yogurt
  • 1 cup filtered water
  • Coconut oil for frying

Directions

  1. Blend the flours, baking powder, stevia, and butter in the food processor.

  2. Whisk the eggs, yogurt, and water in a bowl.

  3. Add the flour mixture and whisk until smooth.

  4. Rest the batter while heating a frying pan to medium-low. Cast iron is the best

  5. pan to use for pancakes.

  6. Pour a little coconut oil in the pan, and add small spoonfuls of batter.

  7. Cook for approx 2 minutes on each side, or until golden.

  8. Serve with butter and a small amount of raw honey.
