Mexican tortillas

Ingredients

  • 1 cup masa flour
  • 3/4 cup water

Directions

  1. Heat a cast iron frying pan while

  2. preparing the tortillas (low/medium

  3. heat).

  4. Mix ingredients, and roll into small

  5. balls (approximately 2½ cm in

  6. diameter).

  7. If using a tortilla press, place two

  8. pieces of plastic on either side of the

  9. ball, and press. Turn the tortilla a few

  10. times and press again.

  11. If not using a press, place the ball

  12. between two large plastic bags. Roll

  13. with a rolling pin, continually turning

  14. and rolling until the tortilla is flat.

  15. Peel the plastic off of the tortilla, and place it carefully in the hot pan (place the

  16. tortilla in your hand, and flip your hand over, so the tortilla lands flat in the pan).

  17. Note: If the tortilla bubbles up immediately, the pan is too hot.

  18. After about 30 seconds, turn the tortilla (once the edges are starting to lift).

  19. Cook on the other side for about 30 seconds, and then place inside a towel.

  20. Keep the tortillas in the towel (to soften) until ready to serve.
