Rice Salad

Ingredients

  • 2 cups brown rice
  • 2 cups chicken stock (page 137)
  • or filtered water
  • 150 g sliced organic, nitrate-free ham
  • 1 red capsicum, diced
  • 1 Lebanese cucumber, diced
  • 1 red onion or a few shallots, diced
  • 1 cob of corn (steamed and then the
  • kernels cut off)
  • 1/2 cup French dressing (page 111)

Directions

  1. Soak the rice overnight, drain the

  2. water, rinse the rice, and drain again.

  3. Add two cups of stock or filtered

  4. water, bring to the boil, and simmer

  5. on very low heat for 40 minutes.

  6. Leave in the pan to cool (without

  7. lifting the lid).

  8. Place rice in fridge overnight, or until

  9. cold.

  10. Combine all the ingredients, and stir

  11. the dressing through.
