Fried Rice

Ingredients

  • 3 cups brown rice
  • 150 g organic bacon (nitrate-free)
  • 2 shallots, finely chopped
  • 2 cups vegetables, chopped into small
  • pieces
  • (such as cauliflower, broccoli, carrot)
  • 2 tbsp tamari

Directions

  1. Soak the rice overnight, drain the

  2. water, rinse the rice, and drain again.

  3. Add two cups of stock or filtered water, bring to

  4. the boil, and simmer on very low heat for 40 minutes.

  5. Fry bacon in a wok or a large frying pan.

  6. Once bacon is cooked, add vegetables, and

  7. braise in the bacon fat for approximately 3 minutes.

  8. Add the rice, and stir well until all grains of rice

  9. are shiny and the rice is heated through.

  10. Remove from the heat, add the tamari, and mix thoroughly
