Penne with Salsa Verde, Mozzarella, and Cherry Tomatoes

may use rice wine vinegar to replace red wine vinegar

Serves 4 people

Ingredients

  • 3/4 cup parsley, lighltly packed
  • 2 cloves garlic, smashed
  • 1 1/2 tbsp capers, drained
  • 1/2 tsp anchovy paste
  • 6 tbsp olive oil
  • 3/4 tsp red wine vinegar
  • 3/4 tsp salt
  • 1/4 tsp black pepper, fresh ground
  • 3/4 lb penne rigate
  • 3/4 lb fresh mozzarella, 1/4 inch cubes
  • 2 cups cherry tomatoes, cut into quarters

Directions

  1. Blend or process parsley, garlic, capers, anchovy paste, olive oil, wine vinegar, salt and pepper.

  2. Cook penne until just done, about 13 minutes. Drain.

  3. In a large bowl, toss the pasta with the parsley mixture, mozzarella, and tomatoes.
