Stir-fry with Egg

Ingredients

  • 2 cups of mixed vegetables, chopped
  • 2 tbsp butter
  • 1/4 cup chicken stock
  • or filtered water
  • 2 tbsp tamari
  • Eggs, lightly beaten (2 per person)

Directions

  1. Melt 1 tbsp of the butter in a wok

  2. or frying pan.

  3. Add vegetables, and toss for

  4. approximately one minute.

  5. Add stock, and cover for

  6. approximately 4 minutes, or until

  7. vegetables are cooked al dente

  8. (cooked, but not soft and overdone).

  9. Remove from heat, and add 1 tbsp of

  10. the tamari.

  11. Melt the other tbsp of butter in a

  12. separate frying pan, add the eggs,

  13. and cook until the egg is solid. It is

  14. easiest to cook the bottom of the

  15. egg in the frying pan, and then put

  16. the pan under the grill for a few

  17. minutes to finish cooking the top.

  18. Cut the eggs into strips, and drizzle

  19. with the remaining tamari.

  20. Add the eggs to the vegetables and

  21. serve.
