Southwest Taco Pie

Ingredients

  • 1 lb ground beef
  • 1 pkg taco seasoning mix
  • 1/3 cup water
  • 2 1/2 cups chopped fresh peppers
  • 1 1/2 cups chopped onion
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 1/2 cups frozen corn
  • 1/2 cup salsa
  • 1 pkg refrigerated pie crust
  • 8 oz shredded cheese
  • 1 can black beans

Directions

  1. Brown ground beef. Drain. Add taco seasoning and water, mix ground beef is well coated. Heat oil in large saucepan over medium heat until hot. Add peppers and onion, cook until tender stirring occasionally. Remove from heat and drain excess liquid. Add garlic, salt, pepper, corn and salsa. Stir well and set aside.

  2. Put pie crust in bottom of 9 inch glass or metal pan.

  3. Combine salsa and corn mixture with ground beef and mix well. Sprinkle 1/2 cup of cheese evenly on the bottom of the crust-lined pan. Spread 1/2 of beef mixture evenly over cheese, pat down. Sprinkle 3/4 cup cheese in pan and spread evenly with remaining beef mixture. Top with remaining 3/4 cup cheese. Top with second pie crust and flute. Slit in several places.

  4. Bake for 30 mins or until crust is golden brown. Cover the edge of the crust with aluminum foil after 15 mins of baking. Let stand 5 mins before serving.

  5. Garnish with sour cream, taco sauce, green sauce, etc
