Spinach Linguini

Ingredients

  • 12 ounces cooked whole wheat linguini
  • 1/2 cup vegetable stock
  • 4 garlic cloves, minced
  • 2 cups fresh spinach, chopped
  • 1/3 cup parmesan cheese
  • 1 Tbsp fresh basil (or 1 1/2 tsp. dried)
  • 1/2 tsp. pepper

Directions

  1. Cook linguini as directed.

  2. Saute garlic in stock in large saucepan over medium heat for two minutes.

  3. Add spinach, basil and pepper.

  4. Cook over low heat until heated through.

  5. Remove from heat.

  6. Mix ingredients together and serve.
