Chicken with Blueberry Ginger Sauce

Ingredients

  • Blueberry Ginger Sauce:
  • 1 1/2 cups fresh blueberries
  • 1 tablespoon minced ginger
  • 1 tablespoon fresh lime juice
  • 1 tablespoon cane sugar
  • 1/4 teaspoon sea salt
  • 1/8 cup chopped scallions
  • 6 4-ounce skinless chicken breast, boned and defatted

Directions

  1. Preheat grill or broiler.

  2. In a blender container combine 1 cup blueberry, ginger, lime juice, cane sugar, salt and scallions and lightly puree. Pour blueberry sauce in a medium bowl and stir in remaining blueberry by hand.

  3. Grill or broil marinated chicken breast 3 to 5 minutes on each side or until cooked through.

  4. Serve each chicken breast with 1/4 cup blueberry ginger sauce.
