Turkey Gumbo

Serves 10 people

Ingredients

  • 1 turkey carcass
  • 4 cups leftover turkey meat
  • 1 cup oil
  • 1 cup flour
  • 1 onion, chopped
  • 6 green onions, sliced
  • 1 bell pepper, chopped
  • 4 small celery stalks, sliced
  • 4 TBSP parsley, chopped
  • 2 garlic cloves, chopped
  • salt
  • pepper
  • 3 bay leaves
  • 1 TBSP thyme
  • 1/8 tsp cayenne
  • 1 10 oz pkg okra, frozen slices
  • additional chicken broth, if needed

Directions

  1. Pick turkey off the bones and put in large pot

  2. Your choice: you can boil the carcass to be sure to get all the meat off, or you can just debone the turkey.

  3. Make a roux on the stove by heating the oil

  4. and add flour until well blended.
  5. Continue cooking until roux is a dark brown,

  6. the darker the better…but don’t burn.
  7. Add roux to large pot.

  8. Add vegetables, stir and cook for about 10

  9. minutes or until veggies are tender.
  10. Add the turkey and cook for 5 more minutes.

  11. Add broth with the seasonings.

  12. Bring to a boil.Reduce heat and simmer 1-2 hours.
