Meatball Stew

Serves 4 people

Ingredients

  • 1 lb. Ground Beef to make meatballs or buy frozen
  • 2 cans small white potatoes
  • 1 can small carrots
  • 1 jar pearl onions
  • 1 can tomato soup
  • 1 can beef broth

Directions

  1. Make small meatballs (ground beef, egg, bread crumbs, poultry seasoning, salt and pepper) or use frozen.

  2. Place meatballs in a 9 × 13 pan, bake in 350 degree oven for 15 minutes.
  3. Transfer meatballs to dutch oven pan and simmer with soups for about 15 minutes.

  4. Add potatoes, carrots and onions and simmer another 15 minutes until heated through.

  5. Serve with salad and corn bread.
