Spinach Stuffed Salmon filets

Ingredients

  • 2 5 ounce salmon filets
  • pinch salt
  • pinch freshly ground black pepper
  • 1/2 10 oz pkg baby spinach, coarsley chopped
  • 1 T pesto
  • 1.5 t chopped dry packed sun dried tomatoes
  • 1.5 t pine nuts

Directions

  1. Heat oven to 400 degrees. Make a slit two thirds of the way through the center of each slamon fillet, making sure not to cut all the way through. Season each fillet with salt and pepper. In a bowl, combine the spinach, pesto, tomatoes, and pine nuts. Spoon 1/3 c of mixture into each slit.

  2. Arrange the filets on a broiler pan with cooking spray. Roast for 8-10 min or until spinach mixture is heated through.
