Scalloped Sweet Potatoes

Ingredients

  • 5 Sweet Potatoes, Peeled
  • 2 Russet Potatoes, Peeled
  • 1 1/2 Cups shredded Gruyere Cheese (6 oz)
  • 1 Cup Shredded Parmasan Cheese (4 oz)
  • Salt and Pepper
  • 2 Cups Heavy Cream

Directions

  1. Preheat Oven to 350 degrees.

  2. Lightly grease 9×13 baking dish.

  3. Using mandoline, slice potatoes 1/16-inches thick.

  4. In medium bowl toss cheeses together. Set aside 1/2 cup.

  5. Beginning w/ sweet potatoes, layer slices like shingles across the bottom of baking dish. Season with salt and pepper. Repeat w/ another layer of sweet potatoes and then Sprinkle with cheese mixture. Repeat process with Russett Potatoes then Sweet, then Russett, etc.

  6. Pour Cream over and sprinkle with remaining cheese.

  7. Cover baking dish with foil and bake 40 minutes. Remove foil and cook until done. Allow to cool for 10 minutes.
