Menu (Dinner): Fish, Kale, Brown Rice

Ingredients

  • 4 'palm-sized' portions firm white fish (cod)
  • 2 servings "5-minute Kale"
  • 2 servings steamed long-grain brown rice

Directions

  1. Prepare kale according to recipe (see "5-minute Kale)

  2. Prepare rice according to package or own preference (we like slightly undercooked – 2 cups water to boil with 1 tsp olive oil and 1/2 tsp Mrs. Dash Garlic & Herb, add 1 1/4 cups brown rice, turn to simmer and cook covered for 25 to 30 minutes)

  3. Rinse fish portions and pat dry. Season (we like Old Bay) and broil until golden turning once (can also fast pan grill). Do not overcook.
