Pork Scaloppine with Herbs

Ingredients

  • 1.5 lb pork cutlets
  • 1 t dried basil
  • 1 t dried thyme
  • 1 T olive oil
  • 3 T lemon juice
  • 2 T capers
  • Salt
  • pepper

Directions

  1. Pound cutlets to 1/4 " thickness.

  2. Rub w/ herbs and spices

  3. Heat oil in skillet. Add pork and cook. Cover with foil after removing.

  4. Add lemon juice and capers to same skillet and cook about 1 min.

  5. Serve pork with lemon juice and caper sauce.
