Pumpkin Cranberry Bread

Ingredients

  • 2 & 1/4 cups all purpose flour
  • 1 tbsp pumpkin pie spice
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 2 cups sugar
  • 1 can (15oz) Libby's pumpkin (NOT pumpkin pie filling)
  • 1/2 cup vegetable oil
  • 1 cup fresh, frozen or sweetened dried cranberries

Directions

  1. Combine first four ingredients in a large bowl.

  2. Combine eggs, sugar, pumpking and oil in small mixer bowl; beat just until blended.

  3. Add pumpkin mixture to flour mixture, stir just until moistened.

  4. Fold in cranberries.

  5. Spoon batter into 2 greased and floured 9×5 loaf pans.

  6. Bake at 350 for 55-60 minutes, until toothpick inserted in center comes out clean.

  7. Cool in pans for 10 minutes.

  8. Remove to wire rack and cool completely.
