Roast Beef Sandwiches with Mustard-Horseradish Mayo

Ingredients

  • 3 tablespoons mayo
  • 2 teaspoons Dijon Mustard
  • 2 teaspoons prepared horseradish
  • 8 slices light whole wheat bread
  • 12 spinach or lettuce leaves
  • 1/2 cucumber (3 oz. total) peeled and thinly sliced
  • 12 slices of roast beef (3/4 pound)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions

  1. 1) In a small bowl, combine the mayo, mustard, and horseradish. Spread over the bread and cover 4 of the slices with the spinach or lettuce. Arrange the cucumber and beef over the spinach or lettuce. Season with salt and pepper. Top the remaining bread and cut in half.
