Porcupine Meatballs

Ingredients

  • 1 1/2 lbs. ground beef
  • 1 cup raw rice
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. onion
  • 2 Tbsp. green pepper
  • 1 can tomato soup
  • 3/4 cup water
  • 1 Tbsp sugar
  • 1 Tbsp melted butter

Directions

  1. Mix ground beef and raw rice by hand.

  2. Add salt and pepper, onion, green pepper and work together well. Form into balls.

  3. Pour mixture of tomato soup, water, sugar and melted butter over meatballs in casserole dish with lid.

  4. Cover casserole and bake 1 hour at 350 degrees. Uncover the last 10 min.
