Oriental Skillet Supper

Serves 4 people

Ingredients

  • 1 cup green pepper strips
  • 2/3 cup bias cut celery
  • 2 Tbsp Crisco
  • 2 large or 4 small tenderized pork cutlets cut in 1/4 inch strips
  • 2/3 cup cold water
  • 2 Tbsp soy sauce
  • 4 tsp cornstarch
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 medium tomatoes, peeled and cut in wedges
  • 2 cups hot cooked rice
  • 1/2 tsp ginger

Directions

  1. In heavy skillet, quickly cook green pepper and celery in hot Crisco until crisp-tender. Remove and set aside.

  2. Add meat to hot skillet; brown quickly. Combine water, soy sauce, cornstarch, sugar, and salt; add to skillet.

  3. Cook and stir until mixture thickens and bubbles.

  4. Add celery, green pepper, and tomatoes; heat through.

  5. Serve over ginger rice; toss hot rice with ginger.

  6. Serve extra soy sauce if desired.
