BERRY MOJITO

Serves 4 people

Ingredients

  • 16 blueberries
  • 16 raspberries
  • 12 strawberries (green tops removed)
  • 13⁄4 oz. soft brown sugar
  • handful of mint leaves (plus extra to decorate)
  • juice of 2 limes
  • 200 ml. white rum
  • soda water
  • crushed ice

Directions

  1. Divide the berries, sugar and mint between 4 tall glasses. Add a handful of crushed ice to each. Stir mixture well. Add the lime juice and white rum, and mix again. Add some more ice so that the glasses are half full. Top up with soda water, stir and serve immediately.
