Chicken Chili

Ingredients

  • 1 lb. ground chicken
  • 2 t. olive oil
  • 1 cup onions, chopped
  • 2 garlic cloves, minced
  • 1 cup celery, chopped
  • 3 cups peppers, chopped (green & paprika)
  • 28 oz. tomatoes, undrained
  • 1 teaspoon dried basil
  • 2 to 3 teaspoons chili powder
  • 1 teaspoon salt, optional
  • 1/3 teaspoon pepper
  • 1 or 2 cans red kidney beans

Directions

  1. Brown ground chicken in skillet.

  2. Saute onion, garlic, celery, and peppers in olive oil for about 5 minutes.

  3. Combine chicken, vegetables, tomatoes, and spices in crockpot and cook on high for 90 minutes or low for several hours.

  4. Add beans about 20 to 30 minutes before eating.
