Chicken Enchiladas

Ingredients listed are for 6 enchiladas, so adjust

Prep time: 10 minutes
Cook time: 20 minutes
Serves 3 people

Ingredients

  • 12 oz shredded mexican cheese
  • 1 can sliced black olives
  • 1/3 cup chopped green onions
  • diced meat
  • corn tortillas (two each?)
  • 1 jar enchilada sauce
  • (diced green chilies 4 oz)

Directions

  1. Mix first four ingredients

  2. Pour 1/2 cup sauce into casserole dish

  3. Heat 1/2 cup sauce and 1/4 cup water in 10 inch skillet

  4. Dip both sides of tortilla in sauce to soften

  5. Please 2/3 cup mixture across center and roll up

  6. Pleace in dish seam side down

  7. Cover with remaining sause

  8. Sprinkle with remaining cheese

  9. Bake uncovered at 350 for 20 minutes
