Mushroom Chicken Risotto

Ingredients

  • 1 TBSP Oil
  • 3 Boneless Chicken Breasts, cut into chunks
  • 1 Tsp minced garlic
  • 8 oz. sliced mushrooms
  • 1 can cream of mushroom soup
  • 2 14/ cup milk
  • 3/4 cup Parmesan cheese
  • 1 cup long grain rice
  • 1 cup frozen peas
  • Additional Parmesan

Directions

  1. In a deep skillet, heat oil over medium heat until hot. Cook & stir in chicken, garlic and mushrooms 6-8 min. Stir in soup, milk and cheese. Bring to a boil. Stir in rice. Cover and cook on low 20 min or until rice tender. Stir in peas. Top with additional cheese.
