Twice Baked Sweet Potatoes

Ingredients

  • 2 med sweet potatoes
  • 2 oz cream cheese, softened
  • 2 TBSP Sour Cream
  • 1 TBSP butter
  • 1/4 tsp salt
  • 2 TBSP brown sugar
  • 1/2 tsp cinnamon

Directions

  1. Microwave pierced potatoes for 12-14 min or until tender. Cut out a thin strip and scoop out pulp. Mash the pulp then add sour cream, cream cheese, butter and salt. Mix well. Spoon into shells. Put on baking sheet and sprinkle with brown sugar and cinnamon. Bake at 425 for 12-15 min or until heated and top is golden brown.
