Paul’s Pumpkin Bars

Ingredients

  • 4 eggs
  • 1 2/3 cup white sugar
  • 1 cup oil
  • 1 (15 oz) can pumpkin puree
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp nutmeg
  • 1 tsp salt
  • Frosting:
  • 1 pkg cream cheese, softened
  • 1/2 cup butter
  • 1 tsp vanilla
  • 2 cups powdered sugar

Directions

  1. Preheat oven to 350

  2. Mix eggs, sugar, oil and pumpkin until light and fluffy. Sift together flour, baking powder, and baking soda, cinnamon and salt. Stir into the pumpkin mixture until combined.

  3. Spread batter into ungreased jelly roll pan. Bake 25-30 min in pre-heated oven. Cool before frosting.

  4. To make frosting:

  5. cream together cream cheese and butter, stir in vanilla. Add powdered sugar a little at a time while beating – until mixture is smooth. Spread evenly onto bars and cut into squares.
