Risotto With Asparagus

Ingredients

  • 1/2 lb of asparagus trimmed and cut into 2 inch pieces
  • 2 1/2 Cups of chicken broth (keep an extra 1/2 cup on hand)
  • 3 Tbsp of finely chopped onions
  • 1 Tbsp and 1 Tsp of olive oil
  • 1 Cup of Arborio rice
  • 1/3 Cup of white wine
  • 1 Tsp of butter
  • 1 Tbsp and 1 Tsp of grated parmesan cheese
  • Salt
  • Pepper

Directions

  1. Place asparagus in large sauce pan. Add ½ inches of water and bring to a boil. Reduce heat and then simmer for 3 minutes until tender. Then set asparagus aside.

  2. In a large saucepan bring the broth to a boil then reduce heat and cover and maintain at a simmer.

  3. In a heavy bottom skillet cook onion in oil over medium heat until tender.

  4. Add rice to onions and stir well. Cook for 3 minutes.

  5. Add wine to rice and cook until it is absorbed.

  6. Stir in a 1/2 cup of simmering broth.

  7. Continue to add broth slowly in this manner until there is about ¼ cup of broth left. This should take about 20 minutes.

  8. Add asparagus and heat through.

  9. Remove from heat and add butter, salt, pepper, and the parmesan cheese.

  10. Serve immediately.
