Lemon Butter Asparagus

Ingredients

  • 1/2 pound of asparagus
  • Salt
  • 2 tablespoons of unsalted butter
  • 1 teaspoon of lemon zest
  • 1 tablespoon of lemon juice

Directions

  1. In a skillet, boil ½ inches of water.

  2. Snap off the ends of the asparagus.

  3. Season water with salt and add asparagus.

  4. Cook for 2-3 minutes until bright green or tender.

  5. Drain asparagus and add butter to the skillet.

  6. Stir in zest and juice.

  7. Return the drained asparagus to the skillet, toss, and allow to sit for 3 – 5 minutes.

  8. Serve sprinkled with extra lemon zest.
