Marinated Green Beans with Olives, Tomatoes, and Feta

Ingredients

  • 2 lbs of green beans, trimmed
  • 1/4 Cup of olive oil
  • 2 Cloves of garlic, minced
  • 1 Cup of kalamata olives, pitted and sliced
  • 2 Tomatoes, seeded and chopped
  • 2 Tbsp of red wine vinegar
  • 1 Tbsp of fresh oregano, chopped
  • 1/2 Tsp of salt
  • 1/4 Tsp of black pepper
  • 8 Oz of feta, crumbled
  • 1 bunch of fresh oregano sprigs

Directions

  1. Boil a large pot of water then add green beans.

  2. Cook until tender for about 8 – 10 minutes.

  3. Drain green beans and plunge into ice water bath and then drain.

  4. Heat olive oil in a skillet over medium heat.

  5. Sauté garlic for 30 seconds.

  6. Remove from heat and stir in olives, tomatoes, vinegar, oregano, salt, and pepper. Pour over green beans.

  7. Toss together until beans are coated.

  8. Sprinkle on feta cheese and garnish with oregano sprigs.

  9. Chill for 3 hours before serving.
