Roast Chicken With Thyme And Onions

Ingredients

  • 2 Lemons
  • 2 2.5 lbs Chickens
  • 2 Large onions peeled and quartered
  • 6 Shallots coarsely chopped
  • 8 Cloves of garlic unpeeled
  • 3 Tbsp of olive oil
  • Salt
  • Pepper
  • 1/2 Cup of softened butter
  • 8 Sprigs of fresh thyme

Directions

  1. Preheat oven to 375°.

  2. Pierce lemons with a fork and place them in the chicken’s cavity.

  3. Place onions, shallots, and garlic around chickens.

  4. Sprinkle vegetables with olive oil.

  5. Season chickens with salt and pepper.

  6. Spread butter over chickens and line with the thyme springs.

  7. Bake chickens in oven for 20 minutes, then increase the temperature to 400° and cook for 30 minutes more.

  8. Allow chicken to cool 15 minutes before serving.
