Classic Potato Salad

Ingredients

  • 6 medium potatoes
  • 1-1/4 c. mayonnaise
  • 1 Tbsp mustard (optional)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 c. thinly sliced celery (2 stalks)
  • 1/3 c. chopped onion (a small)
  • 1/2 c. dill or sweet pickle relish
  • 6 hard cooked eggs, coarsely chopped
  • Paprika (optional)

Directions

  1. Bring potatoes to boil (unpeeled and whole) reduce heat and simmer, covered for 25 minutes or until tender. Drain and cool slightly. Peel and cube. Set aside

  2. In a large bowl combine mayo, mustard, salt and pepper. Stir in celery, onion and pickles.

  3. Add the potatoes and eggs. Toss to evenly coat. Cover and chill for 6-24 hours.
