Zucchini Bread

Ingredients

  • 3 eggs
  • 1 2/3 cups sugar
  • 1 cup oil
  • 1 1/2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon double-acting baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 2 teaspoons cinnamon
  • 3/4 cup nuts -- chopped
  • 2 cups zucchini -- coarsely shredded
  • 1 cup seedless raisins

Directions

  1. Beat eggs until light.

  2. Gradually add sugar.

  3. Sift dry ingredients together.

  4. Add to egg-oil-sugar mixture and beat until smooth.

  5. When well blended, stir in remaining ingredients.

  6. Place batter in two buttered and floured loaf pans (8-1/2″ × 4-1/4").

  7. Bake at 350 degrees for one hour.
