Bacon Wrapped Double Pork Meatloaf

Ingredients

  • 1 tbsp vegetable oil
  • 1/2 med onion, chopped
  • 2 med garlic cloves, minced
  • 1 tsp thyme
  • 2 large eggs
  • 1/2 cup buttermilk, well shaken
  • 2 tbsp dijon mustard
  • 1 tbsp worcetershire sauce
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 lbs ground pork
  • 1 lb bratwurst removed from casings and broken up
  • 1 cup crushed saltines (about 20)
  • 1/4 cup finely chopped parsley leaves
  • 8 strips bacon

Directions

  1. at oven to 400. line a sheet with foil

  2. Saute onion, garlic and thyme

  3. In large bowl, add eggs, buttermilk, mustard, worchestershire, salt and pepper. Whish until eggs are combined. Add the onion mixture, ground pork, sausage, cracker crumbs and parsley. Mix until combined.

  4. Form into 9×5 loaf on sheet, arrange bacon across the top and bake about 55-65 min (155 degrees. Cool for 10 min before slicing.
