Tuscan Pot Roast

Ingredients

  • 3 lb beef roast
  • 1/2 cup flour, divided
  • 1/4 cup zesty Italian
  • 1/2 lb fresh mushrooms
  • 15 small carrots
  • 2 green peppers, quartered
  • 1 onion, chopped
  • 4 garlic cloves
  • 1 can plum tomatoes
  • 2 tsp Italian seasoning
  • 1/4 cup water

Directions

  1. Pat meat dry. Coat with flour. Brown. Add rest of ingredients – except liquid. Cook 2-3 min. Add liquid and stir. Simmer 2-2 1/2 hours.

  2. Gravy – remove meat and veggies. Add flour and whisk into pan. Cook 3-5 min
