Jalapeno poppers

Ingredients

  • 1 lb fresh jalapeno chilies
  • 1 pkg (8oz) cream cheese, softened
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 6 slices bacon, crisp-cooked and crumbled
  • 1/4 tsp salt
  • 1/4 tsp chili powder
  • 1/2 cup cracker or bread crumbs

Directions

  1. Wearing gloves, slice the jalapeno chilies lengthwise into halves. Discard seeds and veins. Rinse chilies.

  2. Combine the cream cheese, mozzarella cheese, cheddar cheese, bacon, salt and chili powder in a bowl and mix well.

  3. Stuff each jalapeno with approximately 1 teaspoon of the cream cheese mixture, rounding the top.

  4. Coat with the cracker crumbs and arrange cheese-side-up in a single layer on a baking sheet.

  5. Bake at 300 F for 20 minutes for hot poppers, 30 minutes for medium-hot poppers and 40 minutes for mild poppers.
