Ceviche

Other suggestions:
- Instead of lime juice, can juice fresh lemons and limes in a 50/50 mix
- Can add other types of fish or shellfish (sea scallops, shrimp, etc)
- Can add a touch of extra-virgin olive oil to the dressing

Ingredients

  • 1/2 pound sea bass fillet, 1-inch dice
  • 3/4 cup lime juice
  • 2 cloves garlic, minced
  • 1/4 cup diced red onion
  • 1/2 cup diced tomatoes
  • 1/4 cup peeled and diced cucumber
  • 1/4 cup roughly chopped cilantro
  • 1/4 teaspoon

Directions

  1. In a non-reactive dish, such as a glass bowl, toss together the sea bass, lime juice, and garlic.

  2. Marinate for 1 hour in the refrigerator. (The lime juice will cook the seafood throughout.)

  3. Once marinated, add remaining ingredients to the sea bass.

  4. Refrigerate 15 minutes.

  5. Serve with tortilla chips.
