Fettuccine with Fresh Vegetables

Ingredients

  • 8 oz. uncooked fettuccine
  • 2 1/2 tablespoons olive oil
  • 2 tablespoons Mrs.Dash Garlic and Herb Seasoning blend
  • 1 medium red bell pepper; cored and seeded, cut into thin strips
  • 1 medium yellow bell pepper; cored and seeded, cut into thin strips
  • 2 cups chopped asparagus
  • 1/4 cup fresh lemon juice
  • 3/4 cup shredded provolone/mozzarella cheese blend

Directions

  1. Prepare pasta according to package directions.

  2. Meanwhile, heat oil in a large skillet over medium heat; add veggies and Mrs.Dash Garlic and Herb Seasoning blend. Cook and stir until tender, about 8 minutes.

  3. Toss together hot pasta, veggies, and lemon juice. Mix in cheese and serve.
