Black and Tan Pork

Ingredients

  • 1 12 oz bottle pale ale (preferably Bass)
  • 1/2 tsp chinese five spice powder
  • 1/4 tsp cayenne pepper, kosher salt & black pepper
  • 3 lbs pork loin
  • 1 tsp extra virgin olive oil
  • 1 small sweet onion, finely chopped
  • 2 cloves garlic, minced
  • 1 12 oz bottle stout beer (Guiness)
  • 1 cup packed brown sugar
  • 1 cup honey
  • 1 tsp minced peeled ginger
  • 1/2 tsp cornstarch

Directions

  1. Prepare te pork. Combine ale, five spice powder, cayenne pepper, salt and pepper in a large resealable bag. Add the pork and mix thoroughly. Let sit 2 to 6 hours.

  2. Make the glaze. Heat olive oil in a pan over medium heat. Add onion and garlic. Cook until golden about 2 mins. Add 1 tablespoon each of stout and brown sugar and cook 4 mins. Add all but 2 tablespoons of the remaining stout, honey, and the remaining 3/4 cup plus 3 tablespoons brown sugar and ginger. Bring to a boil over medium high heat, stirring then lower heat to a simmer until reduced by half 15 to 20 mins. Whisk remaining 2 tablespoons stout and corn starch in a bowl. Stir into sauce and boil. Let sit and cool.
