Falafel with Sesame Sauce

Ingredients

  • Falafel
  • 3 cloves fresh garlic, finely minced
  • 3 cups cooked OR canned chickpeas
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon sweet paprika
  • 1 teaspoon turmeric
  • 2 teaspoons sea salt
  • Spring OR filtered water
  • 1-2 scallions, minced
  • 2-3 fresh flat-leaf parsley sprigs, finely minced
  • Whole-wheat pastry flour as needed
  • Sesame Sauce
  • 3-4 tablespoons sesame tahini
  • Juice of 1 lemon
  • 1/2 to 1 teaspoon sea salt
  • 1 teaspoon brown rice syrup
  • Spring OR filtered water
  • Extras
  • 3 or 4 large whole-wheat pita breads
  • Shredded romaine lettuce
  • 2 ripe tomatoes, diced
  • 8 oz. hummus

Directions

  1. make falafel-Place the garlic, chickpeas, spices, and salt in a food processor and puree until smooth. Adding a small amount of water as necessary to make a thick paste. Add the scallions and parsley and pulse until well combined. Adjust the seasoning to your taste. Transfer the mixture to a bowl and add enough flour to make a dough that holds it shape, but isnt too dry. Shape into 1.5" spheres. To bake, place on a parchment paper lined baking sheet. Bake at 375 until crisp on the outside.

  2. To make the dressing- Whisk all the ingredients until smooth in a small bowl, adjusting seasoning to taste, and add water to create a thick, creamy sauce.

  3. To serve- Lay a pita on a dry work surface. Lay 3 falafel, shredded romaine, and diced tomato on the center of the pita. Spoon some of the hummus over the top and then add the sesame dressing. Roll and wrap in foil for ease of eating.
