Zippy Baked Carrots

Ingredients

  • 2 pounds Carrots, sliced 1/4 " thick
  • 6 slices Swiss Cheese
  • 1 onion. small and minced
  • 4 tablespoons Butter
  • 3 tablespoons Flour
  • 1 teaspoon Chili Powder
  • 2 cups Milk
  • 1 cup Bread Crumbs, fresh and soft
  • 7 slices Bacon, cumbled
  • 2 tablespoons Butter, melted

Directions

  1. Boil carrots in small amount of water until crisp/tender, about 5 minutes.

  2. Layer 1/2 the carrots in a 2 qt. casserole.

  3. Next, layer 1/2 the cheese.

  4. Repeat layers.

  5. Saute onions and4 T. butter, about 2 mins.

  6. Blend in flour and seasonings.

  7. Cook, stirring for 1 minute.

  8. Add milk all at once and cook until thickened.

  9. Pour sauce over carrots-cheese layers.

  10. Mix bread cumbs and 2 T. melted butter; sprinkle over all.

  11. Top with bacon.

  12. Bake at 350 degrees for 25 minutes
