Eggnog Cookies

These don’t spread much, so shape them before baking. They also get hard pretty fast.

Ingredients

  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/4 cups white sugar
  • 3/4 cup unsalted butter, softened
  • 1/2 cup eggnog
  • 1 teaspoon vanilla extract
  • 2 large egg yolks
  • 1 tablespoon ground nutmeg

Directions

  1. Preheat oven to 300 degrees.

  2. In a medium bowl combine flour, baking powder, cinnamon and nutmeg. Mix well with wire whisk and set aside.

  3. In a large bowl cream together butter and sugar with an electric mixer to form a grainy paste. Add eggnog, vanilla and egg yolks and beat at medium speed until smooth.

  4. Add the flour mixture and beat at low speed just until combined. Do not overmix.

  5. Drop by rounded teaspoonfuls onto ungreased baking sheets, 1 inch apart (then shape to your liking). Sprinkle lightly with nutmeg. Bake for 23-25 minutes or until bottoms turn light brown. Transfer to cool, flat surface immediately with spatula.
