Bran Muffins

Ingredients

  • 1/2 cup shortening or vegetable oil
  • 1 1/2 cup white sugar
  • 2 eggs
  • 1 1/2 tsp salt
  • 2 1/2 cups flour
  • 1 cup boiling water
  • 1 cup All Bran
  • 2 cups Nabisco 100% Bran
  • 2 cups buttermilk
  • 2 1/2 tsp baking soda

Directions

  1. Pour boiling water over the All Bran and 100% bran.

  2. Cream shortening, sugar, eggs, salt and flour together.

  3. Dissolve soda in a little buttermilk and add to mixture above along with remaining buttermilk.

  4. Add Bran mixture and mix well.

  5. To bake fill muffin cups 1/2 full and bake for 20 mins in 400 degree oven.

  6. Batter keeps in refrigerator for three weeks.
