Country Meatloaf

Ingredients

  • 2 Tbs oil
  • 1 medium onion, chopped
  • 1 celery stalk, chopped
  • 3 slices of bread in pieces
  • 2 pounds ground beef
  • 1 medium carrot, shredded
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 egg
  • 2 8 oz cans of tomato sauce
  • 3 Tbs brown sugar
  • 3 Tbs cider vinegar
  • 3 Tbs mustard

Directions

  1. Cook onion and celery for about 10 mins over medium heat.

  2. Add torn bread to mixture.

  3. Then add carrot, salt and pepper along with 4 oz tomato sauce.

  4. Add ground beef. Shape into a loaf.

  5. Mix brown sugar, vinegar, and mustard to remaining 12 oz of tomato sauce.

  6. You may save some of sauce for dipping and put remaining sauce on top for baking it.

  7. Bake for 1 1/2 hours in 350 oven.
