I’m So Stuffed Mushrooms

Ingredients

  • 24 large fresh mushrooms
  • 1/4 cup sliced green onions (2)
  • 1 clove garlic, minced
  • 1/4 cup butter
  • 2/3 cup fine dry bread crumbs
  • 1/2 cup shredded cheddar cheese (2 oz)

Directions

  1. Rinse and drain mushrooms. Remove stems; reserve caps. Chop enough stems to make 1 cup.

  2. In a medium saucepan, cook the chopped stems, green onions, and garlic in butter until tender.

  3. Stir in the bread crumbs and cheese.

  4. Spoon crumb mixture into mushroom caps.

  5. Arrange stuffed mushrooms in a 15×10×1-inch baking pan.

  6. Bake in a 425 degree oven for 8-10 minutes or until heated through.
