Garden Harvest Bread

Ingredients

  • 1 cup flour
  • 3/4 cup sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup grated peeled Granny Smith apple (about 1 medium)
  • 1/2 cup grated carrot (about 1 medium)
  • 1/2 cup shredded zucchini
  • 1/4 cup chopped walnuts
  • 1/2 cup vegetable oil
  • 2 large eggs

Directions

  1. Preheat the oven to 350°.

  2. In a large bowl, combine the flour, sugar, cinnamon, baking soda, and salt.

  3. Add the grated apple, grated carrot, shredded zucchini, and walnuts; toss well.

  4. In a small bowl, combine the oil and eggs, stirring with a whisk.

  5. Add the egg mixture to the flour mixture, stirring just until combined.

  6. Spoon the batter into a 8 inch loaf pan coated with cooking spray and bake for 50 minutes.

  7. Cool 10 minutes in the pan on a wire rack; then remove and cool completely before slicing.
